Fire up the Recteq smoker or your oven (or any pellet grill) to 425 F and preheat for approximately 20. Place wings in bags and shake to evenly coat. Apply barbecue sauce with a basting brush and cook for an additional 10 minutes to allow the glaze to set. Salty and sweet, these chicken wings are the perfect game day snack. Instructions Dry the wings with a paper towel Apply the dry rub to the wings Set the pellet grill between 275☏ and 300☏ Place the wings in the smoker, or on a separate rack for easy removal Cook for 45 minutes Flip the wings Cook for another 35 minutes Apply the barbecue sauce with a basting brush Cook for another 10 minutes so the glaze can set. Separate whole wings into pieces by cutting through the joint with a sharp knife also remove the wing tips from the flat portion. Cook the wings for 45 minutes, then flip and cook for an additional 35 minutes. To start, brine the alligator in a 3/4 gallon of water, 1 quart buttermilk, 1 cup kosher salt, 1/2 cup brown sugar and 2 tablespoons Gator Hammock Gator Sprinkle. Place the wings in the smoker, or on a separate rack. During the last 30-40 minutes, glaze with your favorite BBQ Sauce. 1 This my favorite way to make wings, note I use the mild jerk seasoning. Preheat the pellet grill to a temperature between 275☏ and 300☏. The next day, remove the gator from the brine, pat dry and season liberally with the Gator Hammock Gator Sprinkle, available here. Mix all the brine ingredients together, place the gator wings in the brine and then put in the refrigerator overnight.
